Apricot Pecan Bar

I’ve been baking a lot of bars! Chocolate bars, vanilla sugar bars, cranberry bars, tons and tons of bars! Now I made…..Apricot pecan bars! I was too lazy to soften the butter before I made these so I used apricot jelly instead of butter. I know, that’s kind of a weird substitution, but it turned out pretty well. It was sweet, but not too sweet. And, uh, well they were good. Trust me. Plus there’s only 5 ingredients! So easy. Happy summer time!


Apricot Pecan Bars - Printer Friendly Version
½ cup butter
½ cup brown sugar
½ cup apricot jelly
1 ½ flour
½ cup praline pecans or normal pecans

1. Preheat oven to 350˚F
2. Cream butter and sugar. Add in jelly
3. Beat in flour and pecans
4. Press into a greased 8x8 pan
5. Bake for 20 minutes, or until toothpick inserted comes out clean

  1. Love your blog! Love that your recipes are nice and easy, but look so delicious. I use to live on Big Island (for a little while), and miss the islands so much. Anyway - where do you get Ikura? I saw your somen salad with it...

  2. Thanks! I used to bring back ikura from Japan. I would buy it at tsukiji fish market, put it in a styrofoam container with some frozen stuff, then put it in my check-in luggage. Other places that carry ikura are nijiya market, shirokiya, and (sometimes) sam's club. I found if the flavor of the ikura isn't right, (too salty, no flavor, etc) you can make a sauce that makes it taste sooo much better. I will write a post on the sauce, and if i can find, other places that carry ikura. :)

  3. These sound delicious! Substituting the butter also made them lower in fat as well. I often substitute applesauce for butter in my recipes and it usually turns out quite well.
