My favorite low-fat blueberry muffins! these are really yummy and they have very little fat in it. Since there isn't a lot of oil and butter in it, I had to beat the egg whites separately to make the muffins fluffy, and not dense like an oat cake. The batter was really sticky, but when it came out of the oven, they were actually quite good. I usually tweak the recipes I make, and so the end result is never very good, however, this time the muffins were actually really really tasty. Even my brother ate them, and he doesn't even eat muffins, much less ones that i make.
Muffin Recipes
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons butter
1/4 cup applesauce
3/4 cups sugar
2 large eggs * separate the eggs and beat the egg whites until fluffy
1 teaspoons vanilla
1/2 cups plus 3 tablespoons yogurt
1 cups any type of extra add-in (i used blueberries)
*batter will look very sticky, but milk may be added to smooth out batter if looks too thick, but should be thick and sticky
1. preheat oven to 375
2. Mix flour, baking powder and salt together and set aside
3. cream the butter, sugar, and apple sauce in a separate bowl
4. separate eggs and beat egg whites until fluffy, set aside egg whites and mix yolks into apple butter mixture
5. beat in vanilla and stir in yogurt
6. gradually add the flour mixture and fold in egg whites.
7. stir in add-ins
8. bake for 27-30 or until golden brown
