Snickerdoodle Bars

I love making cookies, but sometimes scooping and shaving just takes WAYY too long. Plus, it's way to hot to keep the oven on any longer than it needs to be. So....I made some snickerdoodle bars! Yes, you read it correctly. Snickerdoodle Bars. A cinnamon-y sugary cookie in bar form! I thought they taste super similar to the real thing. Soft, chewy, and cinnamon-y. :)

Snickerdoodle Bars
Adapted from here
Ingredients
1 1/3 cups flour
1 teaspoons baking powder
1/2 teaspoon salt
1 cup brown sugar
1/2 cup butter, at room temperature
1 eggs, at room temperature
1/2 Tablespoon vanilla
1 Tablespoons white sugar
1 1/2 teaspoons ground cinnamon

1. Preheat oven to 350 degrees. Lightly grease a 8x8 inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
3. In a large mixing bowl, beat together the butter, sugar, eggs and vanilla until smooth. Add the flour mixture to the egg mixture and beat until well blended.
4. Spread the batter evenly in the prepared pan.
5. In a small bowl, combine the white sugar and cinnamon.
6. Sprinkle the mixture evenly over the batter in the baking pan.
7. Bake for 25 - 30 minutes or until the surface springs back when gently pressed. Remove from oven and let cool slightly on a wire rack. Cut, then serve!

  2. I love bars because they're so quick and easy!!!! They're moister using partly whole wheat flour. I make brownies using all whole wheat flour!!! :)

  3. Omg those look fantastic! Bars are so much cooler than cookies in my opinion. I just like the whole rectangular deal more than circles!! :)
