Lemon Meringues




Anyone interested in anything super light, super airy, and super delicious?? Well, I am! And what better way to create something that good than making meringues? Oh, and the hint of lemon just adds that extra punch of flavor along with the puffy airyness!

Lemon Meringue

3 egg whites
¾ cup powdered sugar
pinch of cream of tartar
1 teaspoon lemon extract or 2 teaspoons lemon juice
food coloring

beat egg whites until fluffy. Beat in powdered sugar and cream of tartar. Beat in lemon extract and food coloring. Pipe onto a pan lined with parchment paper using a Ziploc bag with the tip cut. Bake at 225˚F for 45 minutes or until firm.
