Cracker Sugar Cookies




I was looking through my pantry, and found a bunch of boxes filled with half eaten crackers. I decided to use up some of my cracker storage by making cracker cookies. The cookies I ended up making tasted like sugar cookies, but sometimes there would be little pieces of crackers or small bursts of salt.

Cracker Sugar Cookies –by me!
Ingredients:
1/3 cup butter
½ cup sugar
1 egg
1 cup whole wheat flour
½ tsp baking power
1 cup crushed crackers (I used Keebler crackers and Carr’s Table Water Crackers. )

Preheat oven to 350˚F. Cream butter and sugar, and then add egg. Add flour and baking powder. Mix until combined. Stir in crackers. Drop onto baking sheets lined with parchment paper. Bake for 12 minutes, or until browned. (My cookies were slightly puffy, so if you want flatter cookies, flatten the cookie with a flat spoon right out of the oven, or leave them puffylike!)
